Thaw K&N's Breakfast Sausage as per instructions on pack and dice.
Heat oil and add potato. Sprinkle salt and black pepper, and cover to cook for 10 minutes on low flame.
Add onion, yellow capsicum, mushrooms, spinach, diced Breakfast Sausages, white pepper, crushed red chilli and mix. Then add eggs and spread evenly. Cover to cook for 10 minutes on medium low heat.
Remove lid and add cheddar cheese and olives. Cover again and cook till cheese melts.
Serve warm for breakfast.
