Thaw K&N's TenderBrest fillets as per instructions on pack and cut into strips.
In a wok, heat oil and sauté garlic for half a minute.
Add TenderBrest fillet strips, and let cook for 4-5 minutes, stirring occasionally.
Add onion, ginger, red chillies, black pepper and stir for a minute to blend flavours.
Add mushrooms, capsicum, tomatoes and mix together.
Add soy sauce and olive oil and sauté till TenderBrest fillets are fully cooked.
Serve hot with a bowl of rice.
