Thaw K&N's Pepperoni Slices as per instructions on pack and set aside.
In a pan add oil and cook spinach till wilted. Then add salt, garlic powder and black pepper; cook on medium heat till fully done.
Let cool and add to cream cheese in a separate bowl, and mix.
Place parchment paper on baking tray and completely layer with parmesan cheese. Then place potato slices over cheese and cover with more parmesan cheese. Bake at 180°C for 15-20 minutes.
Remove tray from oven and layer scalloped potatoes with Pepperoni Slices. Spread cheese and spinach mixture. Add another layer of Pepperoni Slices and generous amount of mozzarella cheese.
Separating scalloped potatoes from parchment paper, gently roll inwards and bake again for 15 minutes.
Dish out and serve fresh.
