Heat sesame oil in a pan. Add cumin, coriander powder and brown sugar to the pan and roast till fragrant. Be careful not to burn the spices.
Add peanuts and coconut milk to the pan and bring mixture to boil for a few minutes.
Add curry powder and tamarind or lemon juice and sprinkle chopped parsley.
Fry K&N's Thunder Fillet as per instructions on pack.
Drain on a paper towel and arrange on bamboo skewers.
Pour sauce over Thunder Fillets and serve with a fresh salad.
