For Stir-fry Vegetables
Cut tortilla into a square shape and divide each square sheet equally into 2 portions to make rectangles.
Make two vertical cuts on each of the rectangular sheet, long enough to fold over.
Brush egg wash on both sides of the widths and overlap each cut portion on another to secure and make a basket.
Bake in a preheated oven for 4-5 minutes at 180°C.
Fry K&N’s Croquettes as per instructions on pack. Cut in half.
Arrange lettuce leaves in the prepared basket.
Spread tikka mayo sauce, add stir-fry vegetables, K&N’s Croquettes and drizzle tikka mayo sauce again on top.
Croquettes Tikka Baskets are ready.
For Stir-fry Vegetables
Heat oil in a pan and sauté garlic for 30 seconds.
Add yellow, red, green bell pepper along with onions and stir fry for a minute.
Season with tikka masala, black pepper powder, salt and mix well. Cook for a minute and set aside.
In a bowl, add mayonnaise, lemon juice, tikka masala, black pepper powder, paprika powder, garlic powder and salt. Mix well and refrigerate until used.
