Thaw K&N's Pepperoni Slices as per instructions on pack.
Chop half a pack of Pepperoni Slices and set aside.
Beat eggs with a beater for 1 minute, add butter and beat for another minute.
Fold in all the other ingredients and mix well.
Grease cup-cake baking tray with oil and fill it halfway with this batter.
Line the edges of each cup-cake mould with Pepperoni Slices.
Fill the moulds all the way through with the remaining batter.
Place a Pepperoni Slice on top of each cup-cake.
Bake them in a hot oven for 20 minutes at 150-180°C, and serve.
