Ingredients
- K&N's Chicken Tikka Chunks - 2 cups
- Olive oil - ½ cup
- Rice vinegar - 4 tbsp
- Icing sugar - 2 tbsp
- Dijon mustard - 2 tbsp
- Salt - 1 tsp
- White pepper powder - 1 tsp
- Tomato puree - 1 tbsp
- Cucumber - 2 cups; diced
- Tomato - 1½ cup; diced
- Iceberg lettuce - 2½ cups
- Green olives - ½ cup
- Caper - 2 tbsp
- Cottage cheese - 200 grams; cubed
Method
Thaw and heat K&N's Chicken Tikka Chunks as per instructions on pack and set aside.
In a separate bowl, mix together olive oil, rice vinegar and icing sugar.
Add mustard and mix to form a paste.
Add salt, white pepper powder and mix.
Mix in tomato puree.
Add cucumber, tomato, iceberg, Chicken Tikka Chunks and mix well.
Add green olives, capers and cottage cheese.
Mix and toss the salad and serve with fresh greens.
