Thaw K&N's Mortadella Slices as per instructions on pack.
Place each pineapple ring and cheese slice between 4 pieces of Mortadella Slices with 2 slices on either side of the pineapple and cheese filling.
Beat the eggs in a bowl and add flour, salt and white pepper powder to make a mixture.
Dip stuffed Mortadella Slices in this mixture and coat with desiccated coconut.
Heat oil in a pan and deep fry the coated slices until golden brown on both sides.
Sprinkle with chopped parsley and serve.
