- K&N’s Croquettes - as required
- Potatoes - 2 cups; boiled and mashed
- Green bell pepper - ½ cup; chopped
- Yellow bell pepper - ½ cup; chopped
- Tomatoes - ½ cup; chopped
- Onion - ½ cup; chopped
- Sweet corn - 1 cup
- Cheddar cheese - 2 cups; shredded
- Egg mixture - as required
- Cheddar and Mozzarella cheese - as required; shredded
- Italian herbs - as required
- Red chilli flakes - as required
- Parsley - as required; chopped
In a baking dish, add a layer of mashed potatoes and top it with green bell pepper, yellow bell pepper, tomatoes, onion, sweet corn, cheddar cheese and egg mixture.
Bake in a preheated oven at 200°C for 20-25 minutes.
Fry K&N’s Croquettes as per instructions on pack.
Take out the baking dish; add a thin layer of Cheddar and Mozzarella cheese.
Top it with K&N’s Croquettes and sprinkle green bell pepper, yellow bell pepper, tomatoes, Italian herbs, red chilli flakes.
Bake it again at 180°C for 10-15 minutes or until the cheese melts.
Sprinkle with fresh chopped parsley. Your Croquette Casserole is ready.
- Eggs - 5
- Salt - ½ tsp
- Black pepper powder - ½ tsp
- Red chilli flakes - ½ tsp
- Baking powder - 1 tsp
- All-purpose flour - ¼ cup
In a bowl, add eggs, salt, black pepper powder, red chilli flakes, baking powder and all-purpose flour & whisk well. Your egg mixture is ready. Set aside.
