- K&N’s Fun Nuggets - 10-12 nuggets
- Fusilli/ Spiral pasta - 300g; boiled
- Pesto sauce - ½ cup
- Oil - for frying
- Cucumber - ½ cup; chopped
- Cherry tomatoes - 9-10; cut into half
- Salt - to taste
- Marinated cottage cheese - as required
- Parmesan cheese - 2-3 tbsp; grated
- Basil leaves - 5-6
For Garlic Cottage Cheese:
- Olive oil - ½ tbsp
- Garlic - 1 tsp; minced
- Black pepper powder - 1 tsp
- Salt - ½ tsp
- Cottage cheese - ½ cup; cubed
In a bowl, add boiled fusilli, pesto sauce and cucumber. Mix well.
Fry K&N’s Fun Nuggets as per instructions on pack and cut each into four pieces.
Toss K&N’s Fun Nuggets in the pesto salad. Add cherry tomatoes and mix well.
Dish out in a serving plate and add a handful of the garlic cottage cheese on top.
Sprinkle parmesan cheese and basil leaves. Pesto Pasta Salad is ready. Serve.
For Garlic Cottage Cheese:
In a bowl, add olive oil, garlic, black pepper powder, salt and cottage cheese.
Toss properly and set aside.
- Spinach - 1 cup; chopped
- Garlic cloves - 2; minced
- Mayonnaise - ¼ cup
- Lemon juice - 2 tbsp
- Black pepper powder - 1 tsp
- White pepper powder 1 tsp
- Red chilli flakes - ½ tbsp
- Salt - ½ tsp
- Walnuts - 1/3 cup
- Parmesan cheese - ½ cup; grated
- Olive oil - ½ cup
In a food processor, add spinach, garlic, mayonnaise, lemon juice, black pepper powder, white pepper powder, red chilli flakes, salt, walnuts, parmesan cheese and olive oil.
Blend well into smooth paste. Refrigerate.
