Ingredients
- K&N's Jumbo Frank Sausage with cheese & onion - 1 sausage
- Olive oil - 1 tbsp
- Onion - ½; chopped
- Red capsicum - ½; chopped
- Medium zucchini - ½; quartered lengthways
- Chilli powder - ½ tsp
- Tomato paste - 1 tbsp
- Canned diced tomatoes - 100 grams
- Water - ½ cup
- Canned corn - 50 grams; drained
- Canned white beans - 30 grams; drained
- Canned red beans - 20 grams; drained
- Fresh parsley - as required; for garnish
- Steamed white rice - as required
Method
Thaw K&N's Jumbo Frank Sausage as per instructions on pack and cut in thin slices.
Heat oil in a frying pan over medium heat. Add onion, capsicum and zucchini. Cook while stirring, for 3 to 5 minutes or until vegetables are just tender.
Add chilli powder. Cook while stirring for 1 minute or until fragrant.
Stir in tomato paste, diced tomatoes and water, and bring to a simmer.
Add corn, beans and thawed Jumbo Frank Sausages to the pan.
Simmer for 7 to 10 minutes or until the sausage is fully heated through.
Top with parsley, and serve with rice.
