Ingredients
  • K&N's Jumbo Frank Sausage with cheese & onion - 1 sausage
  • Olive oil - 1 tbsp
  • Onion - ½; chopped
  • Red capsicum - ½; chopped
  • Medium zucchini - ½; quartered lengthways
  • Chilli powder - ½ tsp
  • Tomato paste - 1 tbsp
  • Canned diced tomatoes - 100 grams
  • Water - ½ cup
  • Canned corn - 50 grams; drained
  • Canned white beans - 30 grams; drained
  • Canned red beans - 20 grams; drained
  • Fresh parsley - as required; for garnish
  • Steamed white rice - as required
 
Method

Thaw K&N's Jumbo Frank Sausage as per instructions on pack and cut in thin slices.

Heat oil in a frying pan over medium heat. Add onion, capsicum and zucchini. Cook while stirring, for 3 to 5 minutes or until vegetables are just tender.

Add chilli powder. Cook while stirring for 1 minute or until fragrant.

Stir in tomato paste, diced tomatoes and water, and bring to a simmer.

Add corn, beans and thawed Jumbo Frank Sausages to the pan.

Simmer for 7 to 10 minutes or until the sausage is fully heated through.

Top with parsley, and serve with rice.
