Ingredients
Flatbread:
  • Wheat flour - 1 cup
  • Salt - 1 tsp
  • All purpose flour - 2 cups
  • Olive oil - 1 tbsp
  • Water - as required

 

Sauce:

  • Tamarind pulp - 1 cup
  • Mint sauce - 1 tbsp
  • Cumin seeds - 1 tsp; roasted
  • Garlic - 1 tsp
  • Salt - to taste

 

Filling:

  • K&N's Kafta Kabab - 12 kababs
  • Onion - 1 medium; sliced
  • Mint leaves - as required
  • Egg - 1; beaten

 

Method
Flatbread:

Sift flour with salt and knead into soft dough. Brush dough with olive oil; loosely cover with cling film or a damp kitchen towel and leave aside to rest for a while.

Roll out dough into a rectangular sheet with a rolling pin and cut to form squares of equal size.

 

Sauce:

Blend all ingredients in a blender for 30 seconds. Use as required.

 

Filling:

Dip K&N's Kafta Kabab in half of the tamarind and mint sauce.

Put 3 dipped Kafta Kababs at the centre of each square sheet of dough. Top with sliced onions and a spoonful of sauce and mint leaves.

Lift adjacent corners of the dough towards each other and press lightly to secure ends.

Brush rolls with beaten egg and bake in an oven at 400°F until fully baked.

Serve hot.
