Ingredients
- K&N's Kofta - 12 koftas
- Cooking oil - 3 tbsp
- Onion - ¼ cup; finely chopped
- Green chilli - 1 tsp; chopped
- Cumin seeds - 1 tsp
- Sugar - 2 tbsp
- Vinegar - 2 tbsp
- Coconut milk - ¼ cup
- Pineapple - ½ cup; sliced
- Green grapes - ½ cup
- Red grapes - ½ cup
- Whole red chilli - 1 tbsp; dandicut
- Almonds - ½ cup; roasted
- Chicken stock - 1 cup; 1 cube K&N's Stok dissolved in 1 cup water
- Salt - 1 tsp or to taste
- Corn flour - 2 tsp
- Spring onion - 1 tbsp; chopped
Method
Deep fry K&N's Kofta as per instructions on pack, and set aside.
In a separate pan, heat 2 tbsp cooking oil and add onions, green chilli, cumin seeds, sugar, vinegar, and fried Kofta while stirring continuously to mix all ingredients.
Add in coconut milk, pineapples, green grapes, red grapes, red chilli, almonds, chicken stock and salt, stirring continuously until it comes to a boil.
Add corn flour and stir occasionally till curry turns slightly thick.
Add 1 tbsp cooking oil and chopped spring onion when cooked.
Stir to mix, and serve hot.
