Ingredients
  • K&N's Mortadella Slices - 8 slices
  • Eggs - 6
  • Onion - 2 tbsp; finely chopped
  • Carrot - 2 tbsp; chopped
  • Milk - 2 tbsp
  • Salt - ½ tsp or to taste
  • Ground Black pepper - ½ tsp
  • Vegetable oil - 2 tbsp
  • Coriander leaves

 

Method

Thaw K&N's Mortadella Slices as per instructions on pack.

Whisk 6 eggs in a bowl and add onion, carrot, milk, salt, black pepper and whisk again to combine.

In a separate pan heat oil and add half of the egg mixture to fry.

As the mixture fries, set on it 4 half folded Mortadella Slices, as pairs in a row and top with coriander leaves.

Fold the egg over Mortadella Slices to form a roll and dish out.

Repeat with remaining half of the egg mixture.

Cut the rolls in 4 pieces and serve hot.
