- K&N’s Nuggets - 24-25 pieces
- Mashed Potatoes - as required
- Vegetable salsa mixture - as required
- Mozzarella cheese - ½ cup; grated
- Green bell pepper - ½ cup; julienned
- Yellow bell pepper - ½ cup; julienned
- Onions - 1 medium; sliced
- Tomatoes - ½ cup; julienned
- Jalapenos - 2-3; sliced
- Red chilli flakes - as required
For Mashed Potatoes
- Potatoes - 500 g; boiled & mashed
- Heavy cream - ¼ cup
- Garlic - 1 tbsp; chopped
- Dried oregano - 1 tbsp
- Black pepper powder - 1 tsp
- Salt - ½ tsp / to taste
- Butter - 2 tbsp; melted
Spread a thick layer of mashed potatoes in a baking dish and add a layer of vegetable salsa.
Fry K&N’s Nuggets as per instructions on pack cut in half; place nuggets on top of salsa.
Add mozzarella cheese, green bell pepper, yellow bell pepper, onions, tomatoes and jalapeno, Sprinkle red chilli flakes on top.
Bake in a preheated oven at 170°C for 6-8 minutes or until the cheese melts. Serve and enjoy.
For Mashed Potatoes
In a bowl, add mashed potatoes, heavy cream, garlic, dried oregano, black pepper powder, salt and melted butter. Mix properly and set aside.
- Oil - 2 tbsp
- Garlic - 1 tbsp; chopped
- Ketchup - 1 cup
- Brown sugar - 1 tbsp
- Green bell pepper - ½ cup; diced
- Yellow bell pepper - ½ cup; diced
- Onion - ½ cup; diced
- Tomato - ½ cup; diced
In a pan, heat oil and sauté garlic for 30 seconds.
Add ketchup, brown sugar and cook for a minute.
Add green bell pepper, yellow bell pepper, onion and tomatoes. Cook for 1-2 minutes and set aside.
