Ingredients
  • K&N’s Pastrami Strips – 25-30 strips 250gm
  • Sweet corn - 1 cup
  • Green bell pepper - ½; chopped
  • Yellow bell pepper - ½; chopped
  • Tomato - ½ cup; chopped
  • Cheddar cheese - 2 cups; shredded
  • Eggs - 8
  • Red chili flakes - ½ tsp
  • Salt to taste
  • Flour - ¼ cup
  • Baking powder - 1 tsp
  • Potatoes - 2 cups; shredded
  • Black pepper - ½ tsp

 

Method

Prepare K&N’s Pastrami Strips as per instructions on pack

In a bowl, whisk together eggs, red chili flakes, salt, flour and baking powder

In a casserole pan, add potatoes, peppers, tomatoes,  K&N’s Pastrami Strips and sweet corns, cheese.

Now pour egg mixture over prior layers.

Bake uncovered in oven at 200c for 30 minutes or until eggs are set.

Serve with optional garnishes of salsa, Coriander, or sour cream.
