Ingredients
- K&N's Pepperoni Slices - 100-115 slices/397 grams
- Olive oil - 1 tbsp
- Onion - 1 tsp; chopped
- Garlic - 1 tsp; chopped
- Tomato - 4; thinly sliced
- Zucchini - 2; thinly sliced
- Cucumber - 2; thinly sliced
- Potato - 2; thinly sliced
- Green capsicum - 2; sliced into thin rings
- Yellow capsicum - 1; sliced into thin rings
- Red capsicum - 1; sliced into thin rings
Method
Thaw K&N's Pepperoni Slices as per instructions on pack.
Heat a pan and add olive oil and sauté onion and garlic for 2-3 minutes.
Place the vegetables and Pepperoni one after the other to form a spiral inside the pan.
Cover the pan with aluminum foil and set to bake at 180°C in a preheated oven for 20 minutes, or until vegetables are crisp.
Remove the aluminum foil and bake at 200°C for 5 more minutes.
After baking, gently brush olive oil on the vegetables and serve.
