Ingredients
- K&N's TenderBrest - 5 fillets
- Cooking oil - ¼ cup
- Garlic - 2 tbsp; chopped
- Onion - ½ cup; julienned
- Ginger - ¼ cup
- Red chillies - 2 tsp; crushed
- Black pepper - ½ tbsp; crushed
- Mushrooms - ½ cup; sliced
- Capsicum - ¼ cup; julienned
- Tomatoes - ½ cup; julienned
- Soy sauce - 2 tbsp; strong (¼ cup if light in flavour)
- Olive oil - ½ tsp; to glaze
Method
Thaw K&N's TenderBrest fillets as per instructions on pack and cut into strips.
In a wok, heat oil and sauté garlic for half a minute.
Add TenderBrest fillet strips, and let cook for 4-5 minutes, stirring occasionally.
Add onion, ginger, red chillies, black pepper and stir for a minute to blend flavours.
Add mushrooms, capsicum, tomatoes and mix together.
Add soy sauce and olive oil and sauté till TenderBrest fillets are fully cooked.
Serve hot with a bowl of rice.
